Concept of sonata cycle, sonata allegro form, evolution of the symphony, one composer's treatment of the symphonic form, audience and social status, program music, symphonic "themes" (musical or general), major vs minor symphonies, historical periods, size and instrumentation of orchestras throughout historical periods, the conductor, concertmaster, contemporary orchestras, recorded histories of specific orchestras, etc.
One on a specific symphony. Background of the composer and relevant contextual information regarding its composition, discussion of the form in each movement, a detailed analysis of the work (focusing on themes, and sections, less stress on music theory and fundamental rules), intended effect on listeners / effect on you, etc.
