David's Favorite Pecan Pie (1 nine-inch pie)
3 eggs
3 tbs. melted butter
1 cup light brown sugar
3/4 cup Karo syrup
1 tsp. vanilla
1 cup pecan pieces
Stir ingredients together and place in unbaked piecrust. Bake at 350 degrees F. for about an hour until it sets. Cover the edges of the piecrust with foil if they start to get too brown).
Pie Crust
2 cups flour, level and sifted
1/2 tsp. salt
1 cup shortening
4 tbs. ice water
1 tsp. white vinegar
With pastry blender, work flour, salt and shortening until like coarse cornmeal. Mix together water and vinegar in a separate bowl. Sprinkle over flour mixture until the dough can be stirred into a ball (you may not need all the water).
Roll out on well-floured surface. Makes two 9-inch pies.
